Debbie Kay's Gluten Free Celebration Yellow Cake 1 cup Premium Gold® Gluten Free Flax & Ancient Grains All-Purpose Flour
1 1/2 tsp. baking powder
1/2 tsp. fine sea salt
1/2 stick sweet cream butter, softened
1/2 cup + 2 Tbsp. sugar
1 large egg
2 tsp. vanilla
2/3 cup milk

Preheat oven to 350 degrees F. Grease and flour two 9 inch round pans.

In a medium bowl, combine the flour, baking powder and salt. Set aside.
Cream together the butter and sugar. Add egg and beat until combined. Add vanilla and beat again.

Add the dry ingredients alternately with the milk to the butter/sugar mixture and mix until smooth.

Evenly pour the batter into cake pans and bake for 25-35 minutes, until a toothpick inserted in the center comes out clean. When cool, frost with favorite chocolate frosting.

Tip: Double the recipe and use two cake pans and frost between layers and outside of cake. Add colored decorating sprinkles for seasonal or special celebrations.

Baking note: 350F is always a good temperature to use, adjusting baking time somewhat if necessary.  Place rack in middle oven for best baking results.  Using the lower rack or too high of a temperature may cause the bottom of cake to overbrown when using Premium Gold® Gluten Free Flax & Ancient Grain All Purpose Flour, as it is more fibrous and contains more oil than other flours.
