Debbie Kay’s Magic Gluten Free Fruit Cobbler

Ingredients:
gluten free  fruit cobbler ¼ lb. butter
¾ cup milk
1 cup sugar
1 cup Premium Gold® Gluten Free Flax & Ancient Grains All-Purpose Flour
1 ½ tsp. baking powder
1¾ cup peeled sliced peaches or your choice of filling
(Substitution tip: ½ of 15 oz. can processed pumpkin and ½ of 15 oz. fruit cocktail, drained)

Topping:
1 cup sugar
1 tsp. Premium Gold® True Cold Milled Pre-Ground Golden Flaxseed
¼ tsp allspice
½ tsp. cinnamon

(Double batch will fill 2 - 8x8 square pans)

Directions:
Preheat oven to 350 degrees F.

Mash cocktail fruit with fork and add mashed pumpkin.

Melt 2 Tbsp. butter in 8x8 baking pan and place in preheated oven for 2-3 minutes.

Mix together milk, sugar, flour and baking powder, then divide in half and pour into each pan. Do not stir. Spread fruit over mixture and sprinkle sugar, spices and ground flax mixture across the top. Pour reserve butter over the top of entire mixture. Tap pans hard on tabletop to remove air bubbles.

Bake for 55 minutes. Watch sides - if they turn in before center is done, place a foil tent over the top. Enjoy -- it is so good.
