Debbie Kay’s Magic Gluten Free Fruit Cobbler


¼ lb. butter
¾ cup milk
1 cup sugar
1 cup Premium Gold® Gluten Free Flour
1 ½ tsp. baking powder
1¾ cup peeled sliced peaches or your choice of filling
(Substitution tip: ½ of 15 oz. can processed pumpkin and ½ of 15 oz. fruit cocktail, drained)

1 cup of sugar
1 tsp. Premium Gold® Flaxseed
¼ tsp allspice
½ tsp. cinnamon

Preheat oven to 350 degrees F. Mash cocktail fruit with a fork and add mashed pumpkin.

Melt 2 Tbsp. butter in 8×8 baking pan and place in preheated oven for 2-3 minutes.

Mix together milk, sugar, flour and baking powder, then divide in half and pour into each pan. Do not stir. Spread fruit over mixture and sprinkle sugar, spices and ground flax mixture across the top. Pour reserve butter over the top of the entire mixture. Tap pans hard on the tabletop to remove air bubbles.

Bake for 55 minutes. Watch sides – if they turn in before center is done, place a foil tent over the top. Enjoy — it is so good.
