Deviled Eggs
Makes 24.


12 hard-boiled eggs
2 tsp. vinegar
3/4 tsp. salt
1/8 tsp. pepper
1 tsp. prepared mustard
2 Tbsp. melted butter
3 Tbsp. mayonnaise

Cut the cooked and cooled hard-boiled eggs in half or lengthwise, your choice. Remove the yolks and mash with a fork until there are no lumps.

Add vinegar, salt, pepper, mustard, butter and mayonnaise and mix well. Beat with a fork until mixture is light and fluffy.

Using a teaspoon, heap the egg yolk mixture into the hollow egg whites. With a fork, make a crisscross design on yolks. Place in the refrigerator to chill.

Suggestions: Add in 3-4 Tbsp. of room temperature cream cheese, grated cheese, deviled ham or chopped ham, or bits of crisp bacon.
