Ingredients:

2 Eggs
2 Tbsp. canola oil
1/2 cup unsweetened applesauce
1 cup non-fat buttermilk
2/3 cup sugar
1 1/4 cup flour
3/4 cup Ground Flaxseed
1 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1/2 cup raisins
1/2 cup unsweetened applesauce
1 cup non-fat buttermilk
2/3 cup sugar
1 1/4 cup flour

Directions:
Preheat oven to 375 degrees F. Grease and flour muffin pan or use paper liners. In large bowl, combine eggs, oil, applesauce, buttermilk and sugar. Mix well
Gradually add in the dry ingredients and mix until just combined. Fold in the raisins.
Fill muffin cups 2/3 full with batter.Bake 30-35 minutes. Cool in pan 5 minutes. Move to a wire rack and cool completely. Enjoy!
