1 egg, beaten 1/4 cup Premium Gold® Gluten Free Flour 1 tsp. baking powder 1/4 tsp. salt 2 cups shredded zucchini 2 Tbsp. water
Directions: In a large bowl, mix together egg, flour, baking powder and salt until batter is smooth. Stir in the zucchini.
Batter will be thin and will thicken as it stands. Add water as needed for consistency.
Heat a non-stick frying pan on medium heat and coat with non-stick spray.Pour pancake batter onto the pan. Watch for the pancake to form bubbles and the griddle side of the pancake to golden, just under one minute. Gently flip the pancake and cook for 30 seconds or until golden. Use non-stick spray between cooking new pancakes.
