Sharp Cheddar Flaxseed Meatloaf Casserole
1 1/2 cups sharp cheddar cheese shredded
1/2 cup Pre-Ground Flaxseed
1/3 cup milk
1/4 cup onion, chopped
1 egg, slightly beaten
1/3 cup flour
1 tsp. salt
1/4 tsp. pepper
4 cups potatoes, thinly sliced
1 qt. frozen green beans, thawed
1 can cream of mushroom soup
1 cup milk
Preheat oven to 300 degrees F.Mix together ground beef, 3/4 cup cheese, ground flaxseed, 1/3 cup milk, onion, and egg. Shape into small meatballs.
Combine flour, pepper, and salt. Put alternate layers of potatoes and beans in baking dish. Sprinkle flour mixture and remaining cheese over top. Mix soup and 1 cup milk and pour over vegetables. Top with meatballs.
Bake for 2 hours or until done.
