I am not Celiac, so I can't say whether or not this flour will trigger any Celiac reactions. I avoid gluten for my Rheumatoid Arthritis. This flour works well as a 1:1 replacement for wheat flour in most recipes I have tried. I am working on using it to make a gluten free sourdough starter and it seems to be working well.
I have been recently been diagnosed to gluten intolerant and have been converting over gluten free products. My hubby bakes all our bread for our house and has been using this flour. He has made a regular bread loaf and banana bread. They have turned out very well and the taste was surprisingly good! We are very pleased to have found such a great alternative!
